Here’s a simple recipe for sugar-free vanilla ice cream:


Ingredients:

2 cups heavy cream
1 cup whole milk
1/2 cup sugar substitute (such as erythritol, xylitol, or a stevia blend)
1 tablespoon vanilla extract
A pinch of salt
4 large egg yolks

Instructions:

Prepare the Ice Cream Base:

In a medium saucepan, combine the heavy cream, whole milk, sugar substitute, and a pinch of salt.
Heat the mixture over medium heat until it starts to steam, but do not let it boil. Stir occasionally to ensure the sugar substitute dissolves completely.
Temper the Egg Yolks:

In a separate bowl, whisk the egg yolks.
Slowly pour about 1/2 cup of the hot cream mixture into the egg yolks while whisking continuously. This is to temper the egg yolks and prevent them from curdling.
Gradually add the tempered egg yolks back into the saucepan with the remaining cream mixture, whisking continuously.


Cook the Custard:


Continue to cook the mixture over medium-low heat, stirring constantly with a wooden spoon or spatula, until it thickens enough to coat the back of the spoon. This should take about 5-7 minutes. Do not let it boil.

Strain and Cool:


Remove the saucepan from the heat and stir in the vanilla extract.
Strain the mixture through a fine-mesh sieve into a bowl to remove any bits of cooked egg.
Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.


Churn the Ice Cream:


Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
Freeze Until Firm:

Transfer the ice cream to an airtight container and freeze for at least 2 hours or until firm before serving.

Tips:


If you don’t have an ice cream maker, you can pour the mixture into a shallow dish, freeze for about 45 minutes, then stir vigorously to break up ice crystals. Repeat this every 30 minutes until the ice cream is fully frozen.
You can add mix-ins like sugar-free chocolate chips, nuts, or fruit during the last few minutes of churning.
