Here's a simple and delicious recipe for Chicken Marsala.



Ingredients:

  • Four boneless, skinless chicken breasts

  • Salt and pepper to taste.

  • 1/2 cup all-purpose flour, for dredging.

  • 1/4 cup olive oil

  • 1 cup mushrooms, sliced

  • 1/2 cup Marsala wine

  • 1/2 cup of chicken broth

  • 2 tablespoons of unsalted butter

  • 1/4 cup heavy cream (optional, for a creamier sauce)

  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Chicken:

    • Pound the chicken breasts to about a 1/4-inch thickness using a meat mallet or rolling pin.

    • Season the chicken with salt and pepper on both sides.

    • Dredge the chicken in the flour, shaking off any excess.

  2. Cook the Chicken:

    • Heat the olive oil in a large skillet over medium-high heat.

    • Add the chicken breasts to the skillet. Cook them for about 4-5 minutes per side. Do this until they are golden brown and cooked through. Remove the chicken from the skillet and set it aside.

  3. Cook the Mushrooms:

    • In the same skillet, add the sliced mushrooms. Cook for about 5 minutes, until the mushrooms are browned and any moisture has evaporated.

  4. Deglaze the Pan:

    • Pour the Marsala wine into the skillet to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for about 2 minutes to reduce slightly.

  5. Add the Broth and Butter:

    • Add the chicken broth to the skillet and stir. Let the mixture simmer for another 2-3 minutes.

    • Stir in the butter until melted and well combined.

  6. Return the Chicken:

    • Return the cooked chicken breasts to the skillet, spooning some of the sauce over the top.

    • Let the chicken simmer in the sauce for about 5 minutes to absorb the flavors.

  7. Add Cream (Optional):

    • If you prefer a creamier sauce, stir in the heavy cream and let it simmer for an additional 2 to 3 minutes.

  8. Serve:

    • Garnish with chopped fresh parsley before serving.

    • Serve the Chicken Marsala over pasta, mashed potatoes, or with a side of vegetables.
