Chicken Marsala
Here's a simple and delicious recipe for Chicken Marsala.
Ingredients:
Four boneless, skinless chicken breasts
Salt and pepper to taste.
1/2 cup all-purpose flour, for dredging.
1/4 cup olive oil
1 cup mushrooms, sliced
1/2 cup Marsala wine
1/2 cup of chicken broth
2 tablespoons of unsalted butter
1/4 cup heavy cream (optional, for a creamier sauce)
Fresh parsley, chopped (for garnish)
Instructions:
Prepare the Chicken:
Pound the chicken breasts to about a 1/4-inch thickness using a meat mallet or rolling pin.
Season the chicken with salt and pepper on both sides.
Dredge the chicken in the flour, shaking off any excess.
Cook the Chicken:
Heat the olive oil in a large skillet over medium-high heat.
Add the chicken breasts to the skillet. Cook them for about 4-5 minutes per side. Do this until they are golden brown and cooked through. Remove the chicken from the skillet and set it aside.
Cook the Mushrooms:
In the same skillet, add the sliced mushrooms. Cook for about 5 minutes, until the mushrooms are browned and any moisture has evaporated.
Deglaze the Pan:
Pour the Marsala wine into the skillet to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for about 2 minutes to reduce slightly.
Add the Broth and Butter:
Add the chicken broth to the skillet and stir. Let the mixture simmer for another 2-3 minutes.
Stir in the butter until melted and well combined.
Return the Chicken:
Return the cooked chicken breasts to the skillet, spooning some of the sauce over the top.
Let the chicken simmer in the sauce for about 5 minutes to absorb the flavors.
Add Cream (Optional):
If you prefer a creamier sauce, stir in the heavy cream and let it simmer for an additional 2 to 3 minutes.
Serve:
Garnish with chopped fresh parsley before serving.
Serve the Chicken Marsala over pasta, mashed potatoes, or with a side of vegetables.
