Kimchi Fried Rice



Here's a simple recipe for Kimchi Fried Rice:

Ingredients:

  • Rice that's a day old works best; use two cups.

  • 1 cup of kimchi, chopped.

  • 1/2 cup kimchi juice

  • 2 tablespoons of gochujang (Korean red pepper paste)

  • 1 tablespoon soy sauce

  • 1 tablespoon sesame oil

  • 1 tablespoon vegetable oil

  • 2 garlic cloves, minced

  • 1 small onion, chopped

  • 1/2 cup diced carrots (optional)

  • 1/2 cup frozen peas (optional)

  • 2 green onions, chopped

  • 2 eggs (optional)

  • Sesame seeds for garnish

Instructions:

  1. Prepare the ingredients.

    • If using day-old rice, break up any clumps with a fork.

    • Chop the kimchi into small pieces.

    • Prepare the other vegetables and ingredients.

  2. Cook the vegetables.

    • Heat the vegetable oil in a large skillet or wok over medium-high heat.

    • Add the chopped onions, garlic, and carrots. Stir-fry for 2-3 minutes until the vegetables are tender.

  3. Add Kimchi:

    • Add the chopped kimchi to the skillet. Cook it for another 2-3 minutes, stirring often.

  4. Add Rice:

    • Add the cooked rice to the skillet, breaking up any clumps. Stir to combine with the vegetables and kimchi.

  5. Season the rice.

    • Add the kimchi juice, gochujang, and soy sauce to the skillet. Stir well to evenly coat the rice.

  6. Optional: Add peas and green onions.

    • Stir in the frozen peas and half of the chopped green onions. Cook for another 2-3 minutes until the peas are heated through.

  7. Fry the Eggs (Optional):

    • In a separate small pan, heat a bit of oil and fry the eggs sunny side up or to your preference.

  8. Finish and Serve:

    • Drizzle sesame oil over the fried rice and stir to combine.

    • Serve the kimchi fried rice hot. Top it with the fried eggs (if using). Garnish it with the rest of the green onions and sesame seeds.
