Lemon Herb Rice Pilaf
Ingredients:
1 cup of long-grain white rice
2 tablespoons olive oil or butter
One small onion is cut into tiny pieces.
2 cloves garlic, minced
2 cups chicken or vegetable broth
1 lemon (zested and juiced)
1 teaspoon dried oregano
1 teaspoon dried thyme
1/4 cup fresh parsley, chopped.
