Lemon Herb Rice Pilaf

Ingredients:

  • 1 cup of long-grain white rice

  • 2 tablespoons olive oil or butter

  • One small onion is cut into tiny pieces.

  • 2 cloves garlic, minced

  • 2 cups chicken or vegetable broth

  • 1 lemon (zested and juiced)

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 1/4 cup fresh parsley, chopped.

  • Salt and pepper to taste

Instructions:

  1. Prep the Ingredients:

    • Rinse the rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.

    • Zest and juice the lemon. Set aside.

  2. Sauté the Aromatics:

    • In a medium saucepan, heat the olive oil or butter over medium heat.

    • Add the chopped onion and sauté until it's become translucent, about 3-4 minutes.

    • Add the minced garlic and sauté for another 1-2 minutes until it's fragrant.

  3. Toast the rice.

    • Add the rinsed rice to the saucepan and stir to coat the rice with the oil or butter. Toast the rice for about 2-3 minutes, stirring frequently.

  4. Add Broth and Herbs:

    • Pour in the chicken or vegetable broth.

    • Add the lemon zest, dried oregano, and dried thyme.

    • Stir to combine and bring the mixture to a boil.

  5. Cook the Rice:

    • Once the mixture reaches a boil, reduce the heat to low. Cover the pot and simmer for 15-18 minutes. Do so until the rice is soft and the liquid is gone.

  6. Finish the Pilaf:

    • Remove the saucepan from the heat and let it sit, covered, for 5 minutes.

    • Fluff the rice with a fork.

    • Stir in the lemon juice and chopped fresh parsley.

    • Season with salt and pepper to taste.

  7. Serve:

    • Serve the Lemon Herb Rice Pilaf as a side dish with your favorite protein or vegetables.
