Thai Pineapple Fried Rice



Here's a recipe for making Thai Pineapple Fried Rice:

Ingredients:

  • 2 cups of cooked jasmine rice (preferably day-old)

  • 1 cup of fresh pineapple, diced

  • 2 tablespoons of vegetable oil

  • 2 garlic cloves, minced

  • 1 small onion, chopped.

  • 1/2 cup mixed vegetables (peas, carrots, corn)

  • 1/2 cup cooked shrimp or chicken (optional)

  • Whisk 2 eggs until they're broken down into a smooth mixture

  • 2 tablespoons soy sauce

  • 1 tablespoon of fish sauce

  • 1 tablespoon of curry powder

  • 1 teaspoon sugar

  • 1/4 cup cashews (optional)

  • 2 green onions, chopped.

  • Fresh cilantro, chopped (for garnish)

  • Lime wedges (for serving)

Instructions:

  1. Prepare the ingredients.

    • If using day-old rice, break up any clumps with a fork.

    • Dice the pineapple into small pieces.

    • Prepare the other vegetables and ingredients.

  2. Cook the vegetables and protein.

    • Heat the vegetable oil in a large skillet or wok over medium-high heat.

    • Add the chopped onions and garlic. Stir-fry for 2-3 minutes until the onions are transparent.

    • If you are using cooked shrimp or chicken, add them now. Stir-fry for 2 more minutes until it is heated.

  3. Scramble the eggs.

    • Push the vegetables and protein to one side of the skillet. Pour the beaten eggs into the other side and scramble them until they are fully cooked.

  4. Add Rice and Pineapple:

    • Add the cooked rice to the skillet, breaking up any clumps. Stir to combine with the vegetables, protein, and eggs.

    • Add the diced pineapple and mixed vegetables, stirring to combine.

  5. Season the Rice:

    • In a small bowl, mix the soy sauce, fish sauce, curry powder, and sugar. Drench the rice with the mixture and sweep the spoon to enfold.

  6. Add Cashews and Green Onions:

    • Stir in the cashews and half of the chopped green onions. Cook for another 2-3 minutes until everything is heated through.

  7. Finish and Serve:

    • Take the skillet from heat. Add the rest of the green onions and fresh cilantro to the fried rice.

    • Serve the Thai Pineapple Fried Rice hot, with lime wedges on the side for squeezing over the top.
