Here’s a recipe for classic Bolognese spaghetti:

Ingredients:

  • Spaghetti: 400 g (14 oz)

  • Ground beef: 500 g (1 lb)

  • Ground pork: 250g (9 oz)

  • Olive oil: 2 tablespoons

  • Chop one large onion into small pieces.

  • Carrot: 1 large, finely chopped

  • Celery stalk: 1, finely chopped

  • Garlic: 3 cloves, minced.

  • Tomato paste: 2 tablespoons

  • Canned tomatoes (crushed): 800g (28 oz)

  • Red wine: 1 cup

  • Milk: 1 cup

  • Beef broth: 1 cup

  • Bay leaves: 2

  • Dried oregano: 1 teaspoon

  • Salt and pepper: To taste

  • Parmesan cheese: Freshly grated, for serving

Instructions:

  1. Prepare the Sauce Base:

    • In a large heavy-bottomed pot, heat olive oil over medium heat.

    • Add finely chopped onion, carrot, and celery. Sauté until the vegetables are softened and slightly caramelized, about 6-8 minutes.

    • Add minced garlic and cook for another minute until fragrant.

  2. Brown the Meat:

    • Add ground beef and pork to the pot. Break up the meat using a wooden spoon and cook until browned, about 8-10 minutes. Season with salt and pepper.

    • Stir in tomato paste and cook for 2-3 minutes to deepen the flavor.

  3. Add Wine and Tomatoes:

    • Pour in the red wine and bring to a simmer, scraping up any brown bits from the bottom of the pot. Allow the wine to reduce by half, about 5 minutes.

    • Add the crushed tomatoes, beef broth, and bay leaves. Stir well to combine.

  4. Simmer:

    • Reduce heat to low and let the sauce simmer gently, uncovered, for 1.5 to 2 hours. Stir occasionally to prevent sticking. Add water if the sauce becomes too thick.

  5. Add Milk:

    • Stir in the milk during the last 30 minutes of cooking. This adds creaminess and helps to mellow out the acidity of the tomatoes.

  6. Cook the Spaghetti:

    • About 15 minutes before the sauce is done, cook the spaghetti in salted boiling water. Use a large pot and follow the package instructions. Drain and set aside.

  7. Finish and Serve:

    • Remove the bay leaves from the sauce and adjust seasoning with salt and pepper as needed.

    • Toss the cooked spaghetti with the Bolognese sauce until well coated.

  8. Garnish and Serve:

    • Serve the spaghetti Bolognese with a generous sprinkling of freshly grated Parmesan cheese.
