Grilled Vegetable Salad
Here's a simple and delicious recipe for Grilled Vegetable Salad:
Ingredients:
1 red bell pepper, sliced into strips
1 yellow bell pepper, sliced into strips
1 zucchini, sliced into rounds
1 yellow squash, sliced into rounds
1 red onion, sliced into thick rings
1 cup cherry tomatoes
2 tablespoons of olive oil
Salt and pepper to taste.
1 teaspoon dried oregano
1 teaspoon dried basil
2 cups mixed greens (arugula, spinach, or your choice)
1/4 cup crumbled feta cheese (optional)
2 tablespoons of balsamic vinegar
1 tablespoon of lemon juice
1 tablespoon chopped fresh parsley (optional)
Instructions:
Preheat Grill:
Preheat your grill to medium-high heat.
Prepare Vegetables:
In a large bowl, mix the bell peppers, zucchini, yellow squash, red onion, and cherry tomatoes.
Drizzle with olive oil and season with salt, pepper, dried oregano, and dried basil. Rotate them to achieve an even distribution of coating.
Grill Vegetables:
Set the vegetables on the grill grates or arrange them in a basket.
