Ingredients:

  • 1 red bell pepper, sliced into strips

  • 1 yellow bell pepper, sliced into strips

  • 1 zucchini, sliced into rounds

  • 1 yellow squash, sliced into rounds

  • 1 red onion, sliced into thick rings

  • 1 cup cherry tomatoes

  • 2 tablespoons of olive oil

  • Salt and pepper to taste.

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • 2 cups mixed greens (arugula, spinach, or your choice)

  • 1/4 cup crumbled feta cheese (optional)

  • 2 tablespoons of balsamic vinegar

  • 1 tablespoon of lemon juice

  • 1 tablespoon chopped fresh parsley (optional)

Instructions:

  1. Preheat Grill:

    • Preheat your grill to medium-high heat.

  2. Prepare Vegetables:

    • In a large bowl, mix the bell peppers, zucchini, yellow squash, red onion, and cherry tomatoes.
