Here’s a simple recipe for making a rich and moist chocolate mud cake:

Ingredients:

  • Cake:

    • 250 g unsalted butter, chopped

    • 200 g dark chocolate, chopped.

    • 1 ½ cups (300 g) caster sugar

    • 1 cup (250 ml) water

    • 2 tbsp instant coffee (optional; enhances chocolate flavor)

    • ½ cup (125ml) milk

    • 1 tsp vanilla extract

    • 2 eggs

    • 1 ½ cups (225g) plain flour

    • ¼ cup (25g) cocoa powder

    • 1 tsp baking powder

    • ½ tsp baking soda

  • Ganache:

    • 200g dark chocolate, chopped

    • ½ cup (125ml) heavy cream

    • 25g unsalted butter

Instructions:

  1. Preheat the Oven: Preheat your oven to 160°C (320°F). Grease and line a 9-inch (22 cm) round cake tin with parchment paper.

  2. Make the chocolate mixture: In a saucepan, combine butter, chocolate, sugar, and water. If using, add coffee. Stir over low heat until melted and smooth. Remove from heat and let it cool for 10 minutes.

  3. Mix the Wet Ingredients: Once cooled, stir in the milk, vanilla, and eggs.

  4. Sift the Dry Ingredients: In a large bowl, sift the flour, cocoa powder, baking powder, and baking soda. Make a well in the center.

  5. Combine Wet and Dry: Pour the chocolate mixture into the dry ingredients. Gently stir until just combined and smooth.

  6. Bake: Pour the batter into the prepared tin. Bake for 1 hour to 1 hour 15 minutes or until a skewer inserted into the center comes out clean.

  7. Cool: Let the cake cool in the tin for 15 minutes, then turn it out onto a wire rack to cool completely.

For the Ganache:

  1. Heat the cream in a small saucepan until it’s just about to simmer. Remove from heat and pour over the chopped chocolate in a bowl. Let it sit for 2 minutes, then stir until smooth.

  2. Stir in the butter for extra shine.

  3. Let the ganache cool slightly before pouring it over the cooled cake.
