Avocado Toast with Poached Egg
Ingredients:
2 slices of whole-grain bread
1 ripe avocado
2 large eggs
1 tablespoon of olive oil
Salt to taste
Pepper to taste
1 tablespoon of lemon juice

Instructions:
Toast the whole grain bread slices until golden brown.
While the bread is toasting, bring a pot of water to a gentle simmer and add a splash of vinegar.
Crack each egg into a small bowl, then slide them into the simmering water one at a time with care.
Poach the eggs for about 3-4 minutes until the whites are set but the yolk remains runny.
Remove the eggs with a slotted spoon and let them drain on a paper towel.
In a bowl, mash the ripe avocado with lemon juice, salt, and pepper to taste.
Spread the smashed avocado evenly on the toasted bread slices.
Top each avocado toast with a poached egg, adding a drizzle of olive oil and more seasoning if desired.
