Avocado Toast with Poached Egg



Ingredients:

  • 2 slices of whole-grain bread

  • 1 ripe avocado

  • 2 large eggs

  • 1 tablespoon of olive oil

  • Salt to taste

  • Pepper to taste

  • 1 tablespoon of lemon juice

Instructions:

  • Toast the whole grain bread slices until golden brown.

  • While the bread is toasting, bring a pot of water to a gentle simmer and add a splash of vinegar.

  • Crack each egg into a small bowl, then slide them into the simmering water one at a time with care.

  • Poach the eggs for about 3-4 minutes until the whites are set but the yolk remains runny.

  • Remove the eggs with a slotted spoon and let them drain on a paper towel.

  • In a bowl, mash the ripe avocado with lemon juice, salt, and pepper to taste.

  • Spread the smashed avocado evenly on the toasted bread slices.

  • Top each avocado toast with a poached egg, adding a drizzle of olive oil and more seasoning if desired.
