Seafood Rice with Vegetables




Ingredients:

  • 1 cup arborio rice

  • 200g fish fillet

  • 200g of shrimp

  • 100g of green beans

  • 1 chopped leek

  • 1 cup chopped broccoli

  • 1 chopped onion

  • 2 tablespoons of vegetable oil

  • 1 tablespoon balsamic vinegar

  • 1 tablespoon tomato puree

  • 1 teaspoon white pepper

  • 1 teaspoon sea salt

  • 1 cup coconut milk

  • 1 tablespoon brown sugar

  • 1 tablespoon of wheat flour

  • 1 beaten egg

  • 1 cup chicken broth

Kitchen Tools Needed:

  • Stove Top

  • Air Fryer

Instructions:

  • In a pan, heat the vegetable oil and sauté the onion and leek until soft.

  • Add the arborio rice and sauté for a few minutes until the grains become slightly translucent.

  • Mix in the tomato puree, chicken broth, and coconut milk. Cook over low heat, stirring occasionally, until the rice is almost cooked.

  • Meanwhile, in a frying pan, cook the fish fillet and shrimp with salt, pepper and balsamic vinegar until done.

  • Add the broccoli and green beans to the rice and cook for another 10 minutes.

  • Mix the fish and shrimp into the rice, adjusting the seasoning if necessary.

  • In a bowl, mix the wheat flour, beaten egg and brown sugar to make a dough. Shape into small balls and fry in the air fryer until golden brown.

  • Serve the seafood rice with the fried balls on top.
