Vegetarian Dum Biryani

Ingredients:
2 cups basmati rice
1 cup mixed vegetables (carrots, peas, beans)
1 large onion, thinly sliced
2 tomatoes, chopped
1/2 cup plain coconut yogurt
2 tablespoons biryani masala
1 teaspoon turmeric powder
1 teaspoon cumin seeds
1 teaspoon garam masala
2 tablespoons ghee or coconut oil
Salt to taste
Fresh cilantro and mint leaves for garnish
4 cups vegetable broth
1/4 cup raisins (optional)
1/4 cup cashews (optional)

Large pot

Instructions:
Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
In a large pot, heat ghee or coconut oil over medium heat. Add cumin seeds and sliced onions, sauté until golden brown.
Add chopped tomatoes, turmeric powder, and biryani masala. Cook until the tomatoes soften.
Stir in the mixed vegetables and cook for 5 minutes. Add salt and garam masala, mix well.
Add the soaked rice to the pot and gently mix with the vegetables.
Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and let it simmer for 20 minutes or until the rice is cooked and liquid is absorbed.
In a separate pan, lightly toast cashews and raisins if using, then add them to the biryani.
Remove from heat and let it sit covered for another 10 minutes. Fluff the rice with a fork before serving.
Garnish with fresh cilantro and mint leaves.
