Ingredients:

  • 6 cups of fresh baby spinach leaves, washed and dried

  • Half a red onion, cut into slim strips.

  • 1 cup cherry tomatoes, halved

  • 1 cup sliced mushrooms

  • 1/2 cup crumbled feta cheese

  • 1/4 cup sliced almonds or walnuts

  • 1/2 avocado, sliced

  • 2 hard-boiled eggs, sliced (optional)

  • Salt and pepper to taste

For the dressing:

  • 1/4 cup olive oil

  • 2 tablespoons balsamic vinegar

  • 1 teaspoon Dijon mustard

  • 1 clove garlic, minced

  • 1 teaspoon honey

  • Salt and pepper to taste

Instructions:

  1. Prepare the dressing:

    • In a small bowl, whisk together the olive oil and balsamic vinegar. Add the Dijon mustard, minced garlic, honey, salt, and pepper. Whisk until well combined. Adjust the seasoning to taste.
