Sugar-Free Vanilla Almond Cake
Here's a step-by-step recipe to make a delicious sugar-free vanilla almond cake:
Ingredients:
For the Cake:
2 cups almond flour
1/4 cup coconut flour
1/2 cup erythritol or another sugar-free sweetener
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, melted
4 large eggs
1 teaspoon vanilla extract
1/2 cup unsweetened almond milk
1/4 cup plain Greek yogurt
For the Frosting:
1/2 cup unsalted butter, softened
8 oz cream cheese, softened
1/4 cup powdered erythritol
1 teaspoon vanilla extract
2 tablespoons heavy cream (optional, for desired consistency)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
Prepare the Dry Ingredients:
In a large mixing bowl, mix the almond flour and coconut flour. Add the erythritol, baking powder, baking soda, and salt. Mix until well combined.
Mix the Wet Ingredients:
In a separate bowl, beat the melted butter and eggs until smooth. Add the vanilla extract, almond milk, and Greek yogurt, and mix until well combined.
Combine Wet and Dry Ingredients:
Introduce dry ingredients to wet ingredients, blending until unified. Be careful not to overmix the batter.
Bake the Cakes:
Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
Bake in the preheated oven for 25-30 minutes. Stop when a toothpick poked into the center of the cakes comes out clean.
Let the cakes cool in the pans for about 10 minutes. Then, remove them from the pans and transfer to a wire rack to cool.
Prepare the Frosting:
In a large bowl, beat the softened butter and cream cheese together until smooth and creamy.
Add the powdered erythritol and vanilla extract, and beat until well combined.
If the frosting is too thick, add heavy cream. Do it one tablespoon at a time until it's the right consistency.
Assemble the Cake:
Once the cakes are completely cooled, place one cake layer on a serving plate.
Spread a layer of frosting on top, then place the second cake layer on top of the first.
Spread the remaining frosting evenly over the top and sides of the cake.
Serve:
Slice and serve your sugar-free vanilla almond cake. Enjoy!
Tips:
Make sure all ingredients are at room temperature before you've started baking.
You can add sugar-free chocolate chips or berries to the batter for extra flavor.
Store any leftovers in an airtight container in the refrigerator for up to five days.
