Sugar-Free Strawberry Ice Cream
Here's a step-by-step recipe to make delicious sugar-free strawberry ice cream.
Ingredients:
2 cups fresh strawberries, hulled and chopped
1 cup heavy cream
1 cup unsweetened almond milk (or any other milk of choice)
1/2 cup erythritol or other preferred sugar-free sweetener
1 teaspoon vanilla extract
2 tablespoons vodka (optional, helps prevent ice crystals)
Pinch of salt
Instructions:
Prepare the Strawberries:
Place the chopped strawberries in a blender or food processor and puree until smooth.
If you prefer a chunkier texture, blend until mostly smooth. But, leave some small strawberry pieces.
Combine Ingredients:
Mix the strawberry puree, heavy cream, almond milk, erythritol, vanilla extract, vodka (if using), and a pinch of salt in a large mixing bowl.
Whisk the mixture until the sweetener dissolves. The mixture should be well combined.
Chill the Mixture:
Cover the bowl with plastic wrap. Refrigerate the mixture for at least 2 hours, or until very cold. This helps the ice cream churn better.

Tips:
No Ice Cream Maker? No problem! Pour the mixture into a shallow container and place it in the freezer. Stir the mixture every 30 minutes. Use a fork to break up ice until it's the right consistency (about 2-3 hours).
Consistency is important. If the ice cream gets too hard in the freezer, let it sit at room temperature for a few minutes. This will soften it up.
