How To Make Sugar-Free Strawberry Ice Cream

Sugar-Free Strawberry Ice Cream

Here's a step-by-step recipe to make delicious sugar-free strawberry ice cream.

Ingredients:

  • 2 cups fresh strawberries, hulled and chopped

  • 1 cup heavy cream

  • 1 cup unsweetened almond milk (or any other milk of choice)

  • 1/2 cup erythritol or other preferred sugar-free sweetener

  • 1 teaspoon vanilla extract

  • 2 tablespoons vodka (optional, helps prevent ice crystals)

  • Pinch of salt

Instructions:

  1. Prepare the Strawberries:

    • Place the chopped strawberries in a blender or food processor and puree until smooth.

    • If you prefer a chunkier texture, blend until mostly smooth. But, leave some small strawberry pieces.

  2. Combine Ingredients:

    • Mix the strawberry puree, heavy cream, almond milk, erythritol, vanilla extract, vodka (if using), and a pinch of salt in a large mixing bowl.

    • Whisk the mixture until the sweetener dissolves. The mixture should be well combined.

  3. Chill the Mixture:

    • Cover the bowl with plastic wrap. Refrigerate the mixture for at least 2 hours, or until very cold. This helps the ice cream churn better.

  4. Churn the Ice Cream:

    • Pour the chilled mixture into an ice cream maker and churn it as the maker's instructions say. This usually takes about 20-25 minutes. Stop when the mixture is like soft-serve.

  5. Freeze the Ice Cream:

    • Transfer the churned ice cream to an airtight container.

    • Place the container in the freezer and freeze for at least 2 hours, or until the ice cream is firm enough to scoop.

  6. Serve:

    • Scoop the sugar-free strawberry ice cream into bowls or cones and enjoy!

Tips:

  • No Ice Cream Maker? No problem! Pour the mixture into a shallow container and place it in the freezer. Stir the mixture every 30 minutes. Use a fork to break up ice until it's the right consistency (about 2-3 hours).

  • Consistency is important. If the ice cream gets too hard in the freezer, let it sit at room temperature for a few minutes. This will soften it up.

  • You can add mix-ins. They include things like sugar-free chocolate chips, nuts, or extra strawberries. Do this during the last few minutes of churning.

Enjoy your homemade sugar-free strawberry ice cream!
