Egg Fried Rice
Here's a simple and delicious recipe for egg fried rice:
Ingredients:
Rice that has sat for a day serves as the base.
2 eggs
1 cup mixed vegetables (e.g., peas, carrots, corn)
One small onion, processed into tiny pieces.
2 cloves of garlic, minced.
3 tablespoons of soy sauce
2 tablespoons of vegetable oil
1 tablespoon sesame oil (optional)
Salt and pepper to taste.
2 green onions, chopped (optional)
Instructions:
Prepare the Rice:
Cool freshly cooked rice on a baking sheet to remove excess moisture. This helps prevent the rice from becoming mushy.
Scramble the eggs:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Beat the eggs in a bowl and pour them into the skillet. Beat eggs vigorously, transforming them into a thick, curdled mass. Remove the eggs from the skillet and set aside.
Cook the vegetables:
In the same skillet, add the remaining 1 tablespoon of vegetable oil.
Add the chopped onion and garlic, and sauté for about 2 minutes until the onion is translucent.
Add the mixed vegetables and cook for another 3 to 4 minutes until they are tender.
Combine rice and eggs:
Add the cooked rice to the skillet, breaking up any clumps with a spatula.
Stir in the soy sauce and sesame oil (if using). Spread rice uniformly with a wide, circular motion.
Add the eggs:
Return the scrambled eggs to the skillet, breaking them up into small pieces.
Stir everything. Make sure the eggs mix well with the rice and veggies.
Season and Serve:
Season with salt and pepper to taste.
Garnish with chopped green onions if desired.
