Mango Chicken Stir-Fry
Here's a simple recipe for Mango Chicken Stir-Fry:
Ingredients:
2 chicken breasts without bones or skin, cut into fine strips
1 ripe mango, peeled and diced
One red bell pepper, sliced into delicate strips.
One yellow bell pepper, cut into slender strips
1 small onion, thinly sliced
2 cloves garlic, minced
1 tablespoon fresh ginger, minced
3 tablespoons soy sauce
2 tablespoons hoisin sauce
1 tablespoon honey
1 tablespoon rice vinegar
1 tablespoon cornstarch
2 tablespoons vegetable oil
Salt and pepper to taste
Cooked rice or noodles for serving
Optional: chopped green onions and sesame seeds for garnish
Instructions:
Prepare the Sauce:
In a small bowl, whisk the soy sauce, hoisin sauce, honey, rice vinegar, and cornstarch until smooth. Set aside.
Cook the Chicken:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the sliced chicken and season with salt and pepper. Cook the chicken until it browns and cooks through. This takes about 5-7 minutes. Remove the chicken from the skillet and set aside.
Stir-Fry the Vegetables:
In the same skillet, add the remaining 1 tablespoon of vegetable oil.
Add the sliced onion, bell peppers, garlic, and ginger. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
Combine Ingredients:
Return the cooked chicken to the skillet with the vegetables.
Add the diced mango and the prepared sauce. Stir everything together. Cook for 2-3 more minutes. Do this until the sauce thickens and coats the chicken and vegetables well.
Serve:
Serve the mango chicken stir-fry over cooked rice or noodles.
Garnish with chopped green onions and sesame seeds if desired.
