Here's a simple recipe for Mango Chicken Stir-Fry:

Ingredients:

  • 2 chicken breasts without bones or skin, cut into fine strips

  • 1 ripe mango, peeled and diced

  • One red bell pepper, sliced into delicate strips.

  • One yellow bell pepper, cut into slender strips

  • 1 small onion, thinly sliced

  • 2 cloves garlic, minced

  • 1 tablespoon fresh ginger, minced

  • 3 tablespoons soy sauce

  • 2 tablespoons hoisin sauce

  • 1 tablespoon honey

  • 1 tablespoon rice vinegar

  • 1 tablespoon cornstarch

  • 2 tablespoons vegetable oil

  • Salt and pepper to taste

  • Cooked rice or noodles for serving

  • Optional: chopped green onions and sesame seeds for garnish

Instructions:

  1. Prepare the Sauce:

    • In a small bowl, whisk the soy sauce, hoisin sauce, honey, rice vinegar, and cornstarch until smooth. Set aside.

  2. Cook the Chicken:

    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

    • Add the sliced chicken and season with salt and pepper. Cook the chicken until it browns and cooks through. This takes about 5-7 minutes. Remove the chicken from the skillet and set aside.

  3. Stir-Fry the Vegetables:

    • In the same skillet, add the remaining 1 tablespoon of vegetable oil.

    • Add the sliced onion, bell peppers, garlic, and ginger. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

  4. Combine Ingredients:

    • Return the cooked chicken to the skillet with the vegetables.

    • Add the diced mango and the prepared sauce. Stir everything together. Cook for 2-3 more minutes. Do this until the sauce thickens and coats the chicken and vegetables well.

  5. Serve:

    • Serve the mango chicken stir-fry over cooked rice or noodles.

    • Garnish with chopped green onions and sesame seeds if desired.
