Here's a simple recipe for Lava Chocolate Cake:

Ingredients:

  • 4 oz (115 g) bittersweet chocolate (60-70% cacao)

  • 1/2 cup (115 g) unsalted butter

  • 1 cup (120 g) powdered sugar

  • 2 large eggs

  • 2 large egg yolks

  • 1 tsp vanilla extract

  • 1/4 cup (30 g) all-purpose flour

  • Pinch of salt

  • Optional: cocoa powder for dusting and ice cream for serving.

Instructions:

  1. Preheat the oven to 425°F (220°C). Coat four 6-ounce ramekins with a thin layer of cocoa powder.

  2. Melt the chocolate and butter: In a microwave-safe bowl or a double boiler, melt them together until smooth. Stir occasionally to avoid burning.

  3. Mix sugar and eggs: In a separate bowl, whisk the powdered sugar with the eggs and egg yolks until well combined.

  4. Combine the chocolate and egg mixtures. Pour in the melted chocolate and butter, blending with the eggs. Whisk constantly to prevent scrambling.

  5. Combine flour and salt: Fold flour and salt until combined, avoiding excess mixing.

  6. Fill the ramekins: Divide the batter evenly among the prepared ramekins. Fill them about ¾ full.

  7. Bake the cakes for 12 to 14 minutes. The edges should be firm, but the centers should still be soft.

  8. Let cool: Remove from the oven and let the cakes sit for 1 minute. Then, carefully invert each ramekin onto a plate.

  9. Serve: Dust with powdered sugar or cocoa powder. Serve immediately with ice cream (if desired).
