Here's a fusion recipe for Korean BBQ Beef Koththu:
Ingredients:
For the Korean BBQ Beef:
Slice 300g beef into thin strips.
3 tbsp soy sauce
1 tbsp sesame oil
1 tbsp honey or brown sugar
1 tbsp gochujang (Korean chili paste) or chili sauce
1 tsp rice vinegar
2 cloves garlic (minced)
1 tsp ginger (minced)
1 tbsp sesame seeds
1 spring onion (chopped)
Salt and pepper to taste
For the Koththu:
4 roti or parathas (cut into strips or squares)
1 large onion (sliced)
1 carrot (julienned)
1 small bell pepper (sliced)
2 green chilies (sliced)
1 egg (beaten)
2 tbsp soy sauce
1 tsp gochujang (optional, for extra spice)
1 tbsp sesame oil (or regular oil)
Salt and pepper to taste
2 tbsp kimchi (optional, for extra flavor)
Fresh cilantro or chopped spring onion for garnish
Instructions:
Marinate the Beef:
In a bowl, mix soy sauce, sesame oil, honey, gochujang, rice vinegar, garlic, ginger, and sesame seeds.
Add thinly sliced beef. Let it absorb flavors for 30 minutes, or until the flavors meld after 2 hours.
Cook the Korean BBQ Beef:
Heat a pan or grill over medium-high heat.
Cook the marinated beef until it is browned and cooked through. Set aside.
Prepare the Koththu:
Heat sesame oil (or regular oil) in a large wok or pan.
Add the onions, green chilies, carrots, and bell peppers. Stir-fry for 2-3 minutes until slightly softened.
Push the veggies to the side of the pan and scramble the beaten egg in the center until cooked.
Add the cooked beef to the pan. Then, add the soy sauce and another teaspoon of gochujang for extra spice, if you like. Stir everything together.
Add the cut roti strips. Toss in the kimchi, if using. Stir-fry for 2-3 minutes until everything is hot and well combined.

Garnish with fresh cilantro or chopped spring onions and sesame seeds.
