Truffle Mac and Cheese
Here’s a recipe for Truffle Mac and Cheese:
Ingredients:
Macaroni pasta: 400 g (14 oz)
Butter: 4 tablespoons
All-purpose flour: 4 tablespoons
Milk: 3 cups
Heavy cream: 1 cup
Cheddar cheese (sharp, grated): 2 cups
Gruyère cheese (grated): 1 cup
Parmesan cheese (grated): ½ cup
Truffle oil: 2 tablespoons (or to taste)
Salt and pepper: to taste
Panko breadcrumbs: 1 cup
Fresh parsley (optional): chopped for garnish
Black truffle (optional): Thinly shaved for garnish
Instructions:
Cook the pasta:
In a large pot, boil salted water. Cook the macaroni per package instructions until al dente. Drain and set aside.
Make the cheese sauce:
In a large saucepan, melt the butter over medium heat.
Once melted, whisk in the flour and cook for 2-3 minutes, stirring constantly, to create a roux. The roux should be lightly golden but not browned.
Gradually whisk in the milk and heavy cream, ensuring there are no lumps. Continue cooking, whisking constantly, until the mixture thickens, about 5-7 minutes.
Add the cheeses:
Lower the heat and blend in the grated cheddar, Gruyère, and Parmesan. Stir until the cheese is completely melted and the sauce is smooth.
Season with salt and pepper to taste.
Incorporate the Truffle Oil:
Stir in the truffle oil, adjusting the amount to your taste. Start with 2 tablespoons and add more if you prefer a stronger truffle flavor.
Combine Pasta and Sauce:
Add the cooked macaroni to the cheese sauce, stirring until the pasta is evenly coated with the sauce.
Prepare for Baking:
Preheat your oven to 350°F (175°C).
Pour the mac and cheese into a large baking dish.
