Spiced Vegetable Paneer Sandwich with Avocado Mint Spread
Ingredients:
200 g paneer, grated
200 g mixed vegetables (carrot, capsicum, peas), finely chopped
1 tsp cumin seeds
1 tsp mustard seeds
1 tsp turmeric powder
1 tsp garam masala
Salt to taste
2 tbsp oil
4 slices of whole-grain bread
1 ripe avocado
1/4 cup fresh mint leaves
1 tbsp lemon juice
1/2 tsp black pepper

Instructions:
In a pan, heat oil over medium heat and add cumin and mustard seeds until they crackle.
Add the chopped mixed vegetables, turmeric, garam masala, and salt. Sauté until vegetables are tender.
Remove from heat and let the mixture cool down a bit, then fold in the grated paneer.
In a mixing bowl, mash the avocado and mix it with mint leaves, lemon juice, and black pepper to create the spread.
Spread a generous amount of the avocado mint mixture on one side of each slice of bread.
Layer the spiced vegetable paneer mixture onto two slices and top with the remaining slices to form sandwiches.
Preheat a griddle over medium heat and place the sandwiches on it, pressing gently with a spatula.
Cook until golden brown on both sides and the paneer is heated through, about 4-5 minutes each side.
Remove from heat, slice, and serve warm.
