 Spiced Vegetable Paneer Sandwich with Avocado Mint Spread





Ingredients:

  • 200 g paneer, grated

  • 200 g mixed vegetables (carrot, capsicum, peas), finely chopped

  • 1 tsp cumin seeds

  • 1 tsp mustard seeds

  • 1 tsp turmeric powder

  • 1 tsp garam masala

  • Salt to taste

  • 2 tbsp oil

  • 4 slices of whole-grain bread

  • 1 ripe avocado

  • 1/4 cup fresh mint leaves

  • 1 tbsp lemon juice

  • 1/2 tsp black pepper

Kitchen Tools Needed:

  • Griddle

  • Mixing bowl

  • Knife

  • Cutting board

  • Spatula

Instructions:

  • In a pan, heat oil over medium heat and add cumin and mustard seeds until they crackle.

  • Add the chopped mixed vegetables, turmeric, garam masala, and salt. Sauté until vegetables are tender.

  • Remove from heat and let the mixture cool down a bit, then fold in the grated paneer.

  • In a mixing bowl, mash the avocado and mix it with mint leaves, lemon juice, and black pepper to create the spread.

  • Spread a generous amount of the avocado mint mixture on one side of each slice of bread.

  • Layer the spiced vegetable paneer mixture onto two slices and top with the remaining slices to form sandwiches.

  • Preheat a griddle over medium heat and place the sandwiches on it, pressing gently with a spatula.

  • Cook until golden brown on both sides and the paneer is heated through, about 4-5 minutes each side.

  • Remove from heat, slice, and serve warm.
