Quick Mutton Biryani
Ingredients:
300g of mutton, cubed
1 cup of basmati rice
2 tablespoons of vegetable oil
1 large onion, sliced
2 cloves of garlic, minced
1 tablespoon of ginger paste
1 teaspoon of cumin seeds
1 teaspoon of garam masala
1 teaspoon of turmeric powder
2 bay leaves
2 green chilies, slit
Salt to taste
2 cups of water
Fresh cilantro for garnish

Instructions:
Heat oil in a pot over medium heat and add sliced onions, cooking until golden brown.
Add minced garlic and ginger paste, stirring for another minute until fragrant.
Add cubed mutton to the pot, followed by cumin seeds, garam masala, turmeric powder, bay leaves, and slit green chilies, mixing well.
Cook the mutton for about 5-7 minutes until it's lightly browned.
Add salt to taste and pour in the water; cover and simmer for 25-30 minutes until the mutton is tender.
While the mutton is cooking, wash the basmati rice under cold water until the water runs clear, then soak for 20 minutes.
Once the mutton is cooked, remove the bay leaves and add the soaked rice to the pot.
Stir gently and add more water if necessary, ensuring the rice is submerged; bring to a boil.
Reduce heat to low, cover the pot with a lid, and cook for another 15-20 minutes until the rice is fluffy.
Once done, fluff the rice with a fork and let it rest for 5 minutes before serving.
Garnish with fresh cilantro before serving.
