 Potato salad with corn



Ingredients:

  • 2 medium potatoes

  • 1 medium onion

  • 1 cup corn (fresh or canned)

  • 2 cups lettuce

Kitchen Tools Needed:

  • Stove Top

  • Pressure Cooker

Instructions:

  • Peel and cut the potatoes into small cubes.

  • Cook the diced potatoes in a pan of boiling water for 5 minutes until tender.

  • Meanwhile, slice the onion.

  • In a large bowl, combine cooked potatoes, chopped onion and corn.

  • Add the chopped lettuce and mix gently.

  • Season with salt and pepper to taste.
