Keto Pineapple and Avocado Salad
Ingredients:
1/2 cup diced fresh pineapple (about 75g)
1 ripe avocado
1 tablespoon lemon juice
1 tablespoon of olive oil
Salt and pepper to taste
Spinach leaves (optional)

Fruit cutter
Instructions:
Cut the pineapple into small cubes and place it in a bowl.
Cut the avocado in half, remove the pit, and scoop out the flesh with a spoon. Dice the avocado and add it to the bowl with the pineapple.
Add the lemon juice and olive oil to the bowl.
Gently mix all the ingredients together to avoid crushing the avocado.
Add salt and pepper to taste.
If desired, serve on a bed of spinach leaves.
