Mini Caprese Skewers
Here's an easy recipe to make Mini Caprese Skewers, a fresh and delicious snack or appetizer!
Ingredients:
1 pint of cherry tomatoes
1 package of fresh mozzarella balls (often called bocconcini or ciliegine).
Fresh basil leaves
Balsamic glaze (store-bought or homemade)
Extra virgin olive oil (optional)
Salt and pepper (optional)
Small wooden skewers or toothpicks.
Instructions:
Prepare the ingredients. Wash the cherry tomatoes and basil leaves. Drain the mozzarella balls from their packaging.
Assemble the skewers. Take a small wooden skewer or toothpick. Layer the ingredients: a cherry tomato, a basil leaf (folded if large), and a mozzarella ball. If your skewers are long enough, you can repeat this layering. Or, keep it simple with one of each ingredient per skewer.
Plate the skewers. Arrange the assembled skewers on a serving platter.
Drizzle with balsamic before serving; drizzle the skewers with balsamic glaze. You can also add a light drizzle of olive oil if desired.
Season and serve. Season skewers with salt and pepper to enhance the flavor.
Tips:
Balsamic Glaze: You can make your own. Simmer balsamic vinegar in a saucepan over medium heat until it's syrupy. This usually takes 10-15 minutes.
Extra Garnishes: For a twist, try adding a piece of prosciutto or a small chunk of avocado to the skewer.
