Here's a simple and delicious recipe for vegetable fried rice:

Ingredients:

  • 2 cups cooked rice  
  • 2 tablespoons vegetable oil
  • One small onion, chopped into tiny pieces

  • 2 cloves of garlic, minced

  • 1 cup mixed vegetables (e.g., peas, carrots, corn, bell peppers)

  • 1/2 cup chopped green beans (optional)

  • 3 tablespoons of soy sauce

  • 1 tablespoon sesame oil (optional)

  • Use one teaspoon of ground ginger or one tablespoon of ginger scraps.

  • 2 green onions, chopped

  • Salt and pepper to taste.

Instructions:

  1. Prepare the Rice:

    • Distribute hot cooked rice to ease cooling and uniform temperature. This helps prevent the rice from becoming mushy.

  2. Cook the Vegetables:

    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

    • Add the chopped onion and garlic, and sauté for about 2 minutes until the onion is translucent.

    • Add the mixed vegetables and green beans. Cook for 4-5 minutes until they are tender but still crisp.

  3. Add the Rice:

    • Push the vegetables to the side of the skillet. Add the remaining 1 tablespoon of vegetable oil to the empty space.

    • Add the rice to the skillet, breaking up any clumps with a spatula.

    • Stir in the soy sauce, sesame oil (if using), and ground ginger. Mix until you evenly coat every grain of rice.

  4. Combine and season:

    • Mix the vegetables back into the rice, stirring everything together.

    • Cook for another 2-3 minutes, allowing the rice to fry and develop a slight crisp.

    • Season with salt and pepper to taste.

  5. Finish and serve:

    • Stir in the chopped green onions.

    • Serve hot and enjoy!
