Vegetable fried rice
Here's a simple and delicious recipe for vegetable fried rice:
Ingredients:
- 2 cups cooked rice
- 2 tablespoons vegetable oil
One small onion, chopped into tiny pieces
2 cloves of garlic, minced
1 cup mixed vegetables (e.g., peas, carrots, corn, bell peppers)
1/2 cup chopped green beans (optional)
3 tablespoons of soy sauce
1 tablespoon sesame oil (optional)
Use one teaspoon of ground ginger or one tablespoon of ginger scraps.
2 green onions, chopped
Salt and pepper to taste.
Instructions:
Prepare the Rice:
Distribute hot cooked rice to ease cooling and uniform temperature. This helps prevent the rice from becoming mushy.
Cook the Vegetables:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the chopped onion and garlic, and sauté for about 2 minutes until the onion is translucent.
Add the mixed vegetables and green beans. Cook for 4-5 minutes until they are tender but still crisp.
Add the Rice:
Push the vegetables to the side of the skillet. Add the remaining 1 tablespoon of vegetable oil to the empty space.
Add the rice to the skillet, breaking up any clumps with a spatula.
Stir in the soy sauce, sesame oil (if using), and ground ginger. Mix until you evenly coat every grain of rice.
Combine and season:
Mix the vegetables back into the rice, stirring everything together.
Cook for another 2-3 minutes, allowing the rice to fry and develop a slight crisp.
Season with salt and pepper to taste.
Finish and serve:
Stir in the chopped green onions.
Serve hot and enjoy!
