Chili Cheese Koththu

 Here’s a spicy and cheesy recipe for Chili Cheese Koththu:




Ingredients:

  • For the Chili Cheese Mix:

    • 200g paneer or any mild cheese (cubed or grated)

    • 1 large onion (sliced)

    • 1-2 green chilies (sliced)

    • 1 small capsicum/bell pepper (sliced)

    • 1 small tomato (chopped)

    • 1 tsp ginger-garlic paste

    • 1 tsp chili powder (adjust to taste)

    • 1 tsp cumin powder

    • 1 tsp garam masala

    • 1/2 tsp pepper powder

    • 1/2 tsp salt (or to taste)

    • 2 tbsp soy sauce

    • 2 tbsp oil

    • 1/2 cup grated mozzarella or cheddar cheese (for melting)

    • 1/2 cup chopped cilantro (for garnish)

  • For the Koththu:

    • 4 roti or parathas (cut into strips or squares)

    • 1 egg (optional, beaten)

    • 2 tbsp oil

    • Chopped spring onions (for garnish)

    • Lemon wedges (for serving)

Instructions:

  1. Prepare the Chili Cheese Mix:

    • Heat 2 tbsp oil in a pan over medium heat.

    • Add the sliced onions and sauté until soft.

    • Add the ginger-garlic paste and cook for 1 minute until fragrant.

    • Add the green chilies, capsicum, and chopped tomatoes. Stir-fry for 2-3 minutes until the vegetables soften slightly.

    • Add chili powder, cumin powder, garam masala, pepper powder, and salt. Stir to coat the vegetables with the spices.

    • Add soy sauce and mix well.

    • Add the paneer cubes or grated cheese. Cook for another 2-3 minutes, until the cheese begins to melt slightly.

  2. Prepare the Koththu:

    • In a separate pan, heat 2 tbsp oil.

    • Add the cut roti strips and stir-fry for 1-2 minutes until they begin to crisp up.

    • Push the roti to the side of the pan and scramble the beaten egg in the center (if using).

    • Add the chili cheese mixture to the roti and toss everything together for 2-3 minutes.

    • Sprinkle the grated mozzarella or cheddar on top. Let it melt, then mix gently to coat the roti with the cheese.

  3. Serve:

    • Garnish with chopped spring onions and fresh cilantro.

    • Serve hot with lemon wedges for a tangy finish.
