Banana Muffins
Ingredients:
200g of flour
150g of banana (mashed)
1 tsp of baking soda
1 tsp of baking powder
100g of brown sugar
50g of sugar
50g of castor sugar
1 tsp of vanilla essence
100g of butter (melted)
100ml of soy milk
100ml of coconut milk
50ml of milk
1/4 tsp of sea salt
100g of dates (chopped)
2 eggs

Blender
Food Processor

Instructions:
Preheat the oven to 180°C (350°F).
In a blender, combine the mashed banana, melted butter, soy milk, coconut milk, milk, and eggs, and blend until smooth.
In a large bowl, sift together the flour, baking soda, baking powder, sea salt, brown sugar, sugar, and castor sugar.
Pour the wet ingredients from the blender into the dry ingredients bowl and mix until just combined.
Fold in the chopped dates gently until evenly distributed.
Scoop the batter into muffin cups and fill them about 2/3 full.
Place the muffin tray in the preheated oven and bake for about 15-20 minutes, or until a toothpick comes out clean. Allow to cool before serving.
