 Banana Muffins



Ingredients:

  • 200g of flour

  • 150g of banana (mashed)

  • 1 tsp of baking soda

  • 1 tsp of baking powder

  • 100g of brown sugar

  • 50g of sugar

  • 50g of castor sugar

  • 1 tsp of vanilla essence

  • 100g of butter (melted)

  • 100ml of soy milk

  • 100ml of coconut milk

  • 50ml of milk

  • 1/4 tsp of sea salt

  • 100g of dates (chopped)

  • 2 eggs

Kitchen Tools Needed:

  • Oven

  • Blender

  • Food Processor

  • Stove Top

Instructions:

  • Preheat the oven to 180°C (350°F).

  • In a blender, combine the mashed banana, melted butter, soy milk, coconut milk, milk, and eggs, and blend until smooth.

  • In a large bowl, sift together the flour, baking soda, baking powder, sea salt, brown sugar, sugar, and castor sugar.

  • Pour the wet ingredients from the blender into the dry ingredients bowl and mix until just combined.

  • Fold in the chopped dates gently until evenly distributed.

  • Scoop the batter into muffin cups and fill them about 2/3 full.

  • Place the muffin tray in the preheated oven and bake for about 15-20 minutes, or until a toothpick comes out clean. Allow to cool before serving.
