Crispy Chicken with Tomato Sauce
Ingredients:
300g chicken breast
100g breadcrumbs
50g all-purpose flour
2 large eggs
200g fresh tomatoes
50g onion
2 cloves garlic
30ml olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon sugar
fresh basil leaves for garnish

Instructions:
Preheat the oven to 200°C (392°F).
Season the chicken breasts with salt, black pepper, and dried oregano. Dredge each piece in flour, dip into beaten eggs, then coat with breadcrumbs.
Heat olive oil in a frying pan over medium heat. Add the chicken and cook until golden and crispy on both sides, about 4-5 minutes per side. Transfer to a baking sheet and finish cooking in the oven for 10-12 minutes.
While the chicken is baking, prepare the tomato sauce. In a saucepan, heat olive oil over medium heat, add chopped onions and minced garlic, cooking until soft and fragrant.
Add chopped tomatoes, sugar, and a pinch of salt to the saucepan. Simmer for about 10-15 minutes until the sauce thickens. Adjust seasoning if necessary.
Serve the crispy chicken topped with the tomato sauce and garnish with fresh basil leaves.
